One of the simplest meals to make is a simple soup. In fact, Italians are famous for a number of genuine and authentic soups from Minestrone, Pappa al Pomodoro, Ribollita to tortellini in brodo. We make many of these at Healthy Italia.
If you are in the mood for a delicate creamy soup try a ‘’vellutata’.’ It is a thick soup, with a creamy consistency which is usually not made with cream, think pea or pumpkin soup that is emulsified. For a more filling soup try this type of hearty and warm ‘’zuppa.’’ You’ll find there is always an Italian soup to meet your culinary requirements.
For a lighter feel try a simple brodo. It is a savory broth made with water with either bones, meat, fish or vegetables, that is simmered slowly to draw out the flavors. It can be eaten alone, but it is most commonly used to prepare other dishes, such as soups, gravies, and sauces. We like to ad tortellini. These are ring-shaped pasta, that can look like a “belly button” to some. They are typically stuffed with a mix of meat, and Parmigiano Reggiano cheese. Originally from the Italian region of Emilia, they are usually served in broth, either of beef, chicken, or both.
But no matter the Italian soup you make the fundamental is always using seasonal vegetables, genuine meat, and earthy grains. Our soups are humble but deliziose!
